These multi-functional units offer 5 distinct functions-all in one unit: blast chilling, blast freezing, thawing, dough retarder and slow cooking. With a simple selection from the control panel, each function is performed within the same cabinet.
The space-saving design features stainless steel interior, exterior and has a central floor drain for easy cleanup. Featuring a stainless steel door with a stay-open feature for easy product loading, a snap-in gasket and an anti-condensation perimeter heater around the door opening ensure a tight seal and prevent condensation.
The electronic control with LCD color display ensures precise control of chilling/cooking cycles. HI5 units also have a one touch hard and soft automatic blast chilling or shock freezing cycles based either on core probe temperature or timed cycle.
With an automatic recognition of the core probe and automatic holding mode at the end of a cycle makes for a user-friendly experience. In addition, the real-time clock provides date, time, and duration of HACCP alarms via a one touch display. The on board program memory holds 99 total cycles (68 factory pre-set recipes, up to 31 custom programs).
The self-contained refrigeration system utilizes R404a refrigerant and features a hermetically sealed compressor with an overload protection. An evaporator fitted with a high flow rate fan ensures maximum cooling efficiency and an adjustable evaporator fan speed button allows for regulation of the fan during the blast chilling cycle. HI5 units also feature a hot gas condensate pan with and overflow tube for direct access to a floor drain.
